Cinco de Mayo is tomorrow! Here are a few recipes that are definitely worth trying!
Chicken Taco Meat
This recipe makes enough for a large party so if your just making this for a small family you can freeze the extra meat to use at a later time! You can also, put the chicken and sauce in a mixer once it is fully cooked and make shredded chicken! It would be great for tacos, enchiladas & quesadillas as well!
Ingredients:
2 tbsp olive oil
6 large boneless, skinless chicken breast, cut into bite-sized pieces
3 garlic cloves, minced
1 large onion, chopped
2 tbsp chili powder
2 tsp paprika
1 tbsp cumin
salt
14 oz can tomato sauce
Directions:
In a skillet over medium-high heat, add the olive oil and heat until hot. Add the chicken in batches and cook, browning, a couple minutes per side; remove the chicken to a plate using a slotted spoon. Add the garlic and onions to the skillet and cook briefly. Add the chili powder, paprika, cumin and salt to taste. Pour in the tomato sauce and 2 cups water to create a broth. Add the chicken back to the skillet. Bring to a boil, then simmer until the broth is reduced by half.
Let cool, divide among 4 freezer bags and freeze.

Corn and Yellow Rice Casserole
Ingredients:
1 (5 oz.) pkg. yellow rice, cooked as directed
1 stick butter, melted
1 (12 oz.) can Mexicorn, undrained
1 can celery soup
1 1/2 c. Cheddar cheese, shredded

Directions:
Mix ingredients, cook for 10 minutes at 350 degrees. Uncovered.

*When I made this I couldn't find a can of Mexicorn at the store and I didn't have any bell peppers on hand so I just used a can of whole kernel corn and added a small jar of pimentos. I was really pleased with how it turned out!
Chips and cheese dip are just store bought
Ingredients:
Lots of ice (about 1 to 2 cups ice cubes)
8 to 10 fresh ripe strawberries
4 ounces good-quality tequila
1 1/2 ounces fresh-squeezed lime juice
1 1/2 ounces Triple Sec
Simple Syrup, optional
Coarse salt or sugar, for rimming the glass
Whole fresh strawberries, garnish
Lime slices garnish
8 to 10 fresh ripe strawberries
4 ounces good-quality tequila
1 1/2 ounces fresh-squeezed lime juice
1 1/2 ounces Triple Sec
Simple Syrup, optional
Coarse salt or sugar, for rimming the glass
Whole fresh strawberries, garnish
Lime slices garnish
Directions:
Prepare the strawberries. Fill the blender half way with ice. Add strawberries, tequila, triple sec, and lime juice. Blend until smooth. Simple syrup can be added if you like a sweeter taste. Prepare your glasses by rubbing a lime wedge on the rim of the glass and then dipping the glass in the salt or sugar. Pour your margarita and garnish with strawberry and/or lime. If you are not a tequila fan, you can substitute the tequila with rum and make a daiquiri! Enjoy! (FYI The Dollar Tree has margarita glasses! That's where mine are from!)
