Yummy Fall Pumpkin Bread



Who likes pumpkin bread or just pumpkin anything!?! Today, I'm sharing this yummy pumpkin bread recipe. This bread is so moist and delicious and makes your house smell divine! Shawn Johnson shared her mama's simple and easy recipe for this bread and I couldn't wait to make it. This recipe yields 5 small loaves but I opted to make 2 large loaves instead.



INGREDIENTS:

* 5 eggs
* 15 oz canned pumpkin
* 1 1/4 cup veg oil
* 2 cups flour
* 2 cups sugar
* 2 (3 oz) vanilla pudding mix (I used french vanilla)
* 1 tsp. baking soda
* 1 tsp. cinnamon
* 1/2 tsp. salt
*optional add-ins (chocolate chips, pecans, raisins)

DIRECTIONS:

In a mixing bowl, beat the eggs. Add the oil and pumpkin; beat until smooth. Combine the remaining ingredients in a separate bowl and gradually beat into the pumpkin mixture. At this point you can fold in your choice of add-ins or leave them out. I decided to add some Sea Salt Caramel Chips to mine! YUMMY! Pour battle into 5 greased small loaf pans (I used 2 large loaf pans) Bake at 325 F for 50-55 minutes (I had to bake mine a little longer because of the larger loaves) Cool on a wire rack.
